This campfire skillet apple cobbler is the perfect camping dessert! It's super quick to prepare in advance, packs and travels like a dream and creates the most impressive fireside treat.
For the Apple Filling:
Things You'll Need
-
4 crisp apples peeled, cored, and sliced thin
-
1 tablespoon lemon juice
-
1 tablespoon cornstarch
-
1 teaspoon ground cinnamon
-
½ teaspoon salt
-
1 cup brown sugar
For the Cobbler Topping:
Things You'll Need
-
1 cup all-purpose flour
-
¼ cup brown sugar
-
2 teaspoons baking powder
-
½ teaspoon salt
-
6 tablespoons unsalted butter, chilled, cut into cubes
-
¼ cup milk
Step 1: Prepare the Filling
Add all the filling ingredients to a gallon sized Ziploc bag. Toss until well coated. Refrigerate (or add to an ice chest) until ready to use.
Step 2: Mix the Dry Ingredients
Stir together the topping flour, brown sugar, baking powder and salt in a mixing bowl.
Step 3: Rub in the Butter
Rub the butter into the dry ingredients with your hands until well combined. You can also use a pastry cutter or even a food processor to mix the butter into the dry ingredients.
Step 4: Add the Milk
Stir the milk into the topping ingredients.
Step 5: Add Topping to a Bag
Add the mixture to a Ziplock bag. Refrigerate (or add to an ice chest) until ready to use.
Step 6: Pack
Pack the filling bag, the topping bag, a 9-inch cast iron skillet and some aluminum foil for your camping trip. Keep the filling and topping in the ice chest until ready to use.
Step 7: Add the Filling to the Skillet
Once your fire is well underway (mostly hot coals with low flames), add the filling to the skillet in an even layer.
Step 8: Add the Topping
Crumble the topping over the filling in an even layer.
Step 9: Cover and Bake
Cover tightly with aluminum foil and add to a wire grate over the fire. Cook just until the topping has puffed and cooked, 15-20 minutes (time depending on how hot your fire is). If the cobbler sits on the fire too long, the sugars will burn.
Step 10: Serve and Enjoy
Carefully remove and ladle into bowls. It's hot so be careful! Serve with Cream or Ice-Cream.
